How Many Vegetables Do YourHealthAtTheCrossroads.com Readers Eat?

You might remember from last week that I made a simple little survey to find out how many vegetables readers of YourHealthAtTheCrossroads.com consume (as well as a couple of other related questions).  Well, the results are in.

Out of those who responded, here are the results for each question:

#1:  Approximately how many cups of vegetables do you think you eat every day?

vegetables-q1To put this in perspective, the USDA recommends that women between the ages of 19 and 50 consume at least 2.5 cups of vegetables per day, and that men in the same age group consume at least 3 servings of vegetables per day.

#2:  Are most of the vegetables you eat canned, frozen or fresh?

vegetables-q2Fresh vegetables, the ones you get directly from the produce section and clean and cut yourself, are the healthiest choice since they will have the most available nutrients and enzymes.  That means that folks who read this blog are doing pretty good.

Frozen vegetables are the next best bet, leaving canned vegetables in last place.  Eating canned might be the least beneficial to health, but it’s better than not eating vegetables at all.

#3:  What kind of vegetables do you eat the most?

vegetables-q3The overwhelming majority of folks said that most of the vegetables they consume are the green ones, which is good.  It doesn’t mean that the others like legumes and starchy vegetables aren’t as healthy, though.  As a matter of fact, some consider sweet potatoes to be the healthiest vegetable you could eat, and regular potatoes are one of the best sources of potassium that you could consume.


Now, the reason that I conducted this poll is because I want to issue a challenge to you.  The challenge is going to be related to vegetables, but I will give the specifics in the next blog post.  So stay tuned!

    I know the challenge has not officially started but Today we ate green beans, red cabbage( new dish), pinto beans, brown rice along with a little meat. Apple and water.This is going to be interesting.

    Ok, hubby and I had 1 cup collards, 1 cup black beans, 1 cup collard salad(yup, not bad at all), 1/2 cup butternut squash soup before the other food and honestly, after we finished that we didn’t want much of the other food I had prepared. We are still feeling full and it is 8:00pm. Feeling full still. I am hoping to break a plateau i have been for a very long time. Looking forward to seeing results.

    • Excellent! Yeah, that’s one of the points of this challenge…to get plenty of nutrient packed, low-calorie vegetables in FIRST, then with whatever room is left, get a little of the other food. I’m about to post now on what my wife and I did today.

  • This morning, my wife and I had one cup each of cooked spinach before breakfast (8 cups of raw spinach cooked all the way down to 2 cups…what a shame, lol).

    For lunch, we had two cups of green beans and two cups of cooked kale. That brought us to 5.

    Tonight, we’re going to get in two more cups of green beans and at least one more cup of kale to get our 8 cups in. And also tonight, I need to clean and cook the broccoli that we plan to eat before lunch and dinner for the next two days.

    I had four cups of kale(from the Connections garden) and spinach with a few grape tomatoes and balsamic dressing for lunch…yummy! I will have collards and green beans with my meal for dinner and a green smoothie as dessert.

  • Alright, today for lunch I had approximately 3 cups of salad. For “snack”, I had 2 cups of steamed broccoli, and for dinner, I had 2 cups of cooked kale and 1 cup of steamed broccoli.

  • Today, I had three cups of broccoli for snack, and a half cup of cooked kale and 4.5 more cups of broccoli for dinner.

    Yesterday we did reruns but not a cup each, instead we ate a 1/2 cup of butternut squash soup, black beans, brown rice, collards red cabbage for lunch and dinner along with a 20z hamburger pattie with 1/3 gravy.

    This morning went so great.
    1 slice wheat toast, 2 slices of turkey bologna( I know this is pathetic) large banana and a half of a grapefruit.
    Lunch: 1large Power kale and chicken caesar salad from Panera with a large green tea
    Dinner: Cracker Barrel;s turnip green, green beans, coleslaw(X), 1 grilled catfish filet.

    Will do better tomorrow.

    • All good. We didn’t get all of our green vegetables in yesterday because it was so eventful, but we definitely will today.

  • Today I had 1.5 cups of cooked spinach, 1 cup of green beans, and 5.5 cups of cooked broccoli.

  • Today was unfortunately another incomplete day. I had 2 cups of broccoli for lunch. I should have prepared yesterday for today, because I didn’t really have time today. Oh well…one day left!
